Welcome to the FFC Walleye Recipes page. The walleye is the most popular freshwater eating fish in Canada for good reason. The meat is light and flaky with few bones, and the taste is fantastic (especially if caught that day).

These are some of our favorite recipes that have been passed along over the years. Take a look, you are sure to find something that will get your mouth watering. FFC Walleye Recipes - Fish Tacos

What? A "walleye recipes page" and the first on the list are fish tacos?? This is arguably the most underrated way of cooking freshwater fish in Canada. It seems like the only time people have fish taco's is when they are in Mexico or the southern US. This is one dynamite dish which requires a bit of prep time - but it is worth it!

Don't forget to squeeze some fresh lime juice just before you eat them. It changes the whole character. Fresh salsa is a nice topping to consider as well.

For the beer, try to find some unfiltered, unpasteurized beer. Regular will work fine if you can't get your hands on the other.

Note: You need to let the batter sit for several hours, or even over night.

This recipe will make about six large tacos. Northern Pike or trout can be substituted, but walleye is the best.

Ingredients

3/4 cup flour

1/2 tsp baking powder

1/2 tsp crushed oregano

1/2 tsp garlic powder

1/2 tsp chili powder

1/4 tsp cayenne pepper

Salt & pepper as you like

1 egg yolk

4-6 oz beer

Oil for frying

1/2 cup mayonnaise

1 tbsp chopped cilantro

1/2 lime

1 ripe avocado

2 cups shredded cabbage

1 to 1.5 lb walleye fillets

Steamed tortillas

Lime for squeezing

1. Make the batter. In a medium bowl mix together the flour, baking powder, spices, beer, and egg yolk. If the mixture is too thick, add a bit more beer, but don't let it get watery. It should be plenty thick to coat the fish.

2. Cover the batter and let it sit in the fridge for at least 3 hours. You can even let it sit overnight or through the work day.

3. When you are ready to start cooking the fish, heat the oil to 375. Mix the mayo, cilantro, and enough lime juice to make it "saucy." Slice the avocado. Slice the lettuce paper thin. And cut the fish into portions that will fit well in a taco after you fry them.

4. Once the oil is hot, dip the fish in the batter and get it well coated. Cook one to two slices at a time - depending on the size of the fillets. Drop a slice into the oil while the batter is still dripping off and fry it for about 3-5 minutes, turning half way through. While the fish is cooking, go ahead and steam the tortillas.

5. Grab a steamed tortilla, add a piece or two of fish, a couple slices of avocado, sprinkle on some lettuce, add sauce to taste, and just before you eat it, squeeze on some lime juice.

FFC Walleye Recipes - Don’s Baked Walleye

Ingredients

8 walleye fillets

2 chopped green onions

½ brick of butter

6 ounces crushed almonds

Bread crumbs

Salt

Pepper to taste

Preheat the oven to 450F. Lightly salt the fillets. Add pepper to taste. Roll the fillets in bread crumbs. Bake fillets for 15 minutes.

Melt butter and sauté the crushed almonds, and chopped onions. Spoon the almonds and onions over the fillets and cook for 2-3 minutes.

Very good with wild rice on the side. Serves 6.


FFC Walleye Recipes - Walleye Slow Fry

Ingredients

10 walleye fillets

2 eggs, beaten

1/3 cup Italian dressing

4 chopped green onions

1 brick of butter

2 tsp parmesan cheese

Bread crumbs

Lemon or lime

Mix the eggs and Italian dressing. Dip the walleye fillets in the egg/dressing mix. Roll in bread crumbs until covered. Slowly melt a generous portion of the butter in a large frying pan. Put the chopped onions in the butter, and immediately cover the onions and butter with fish fillets. Cook on high for about 3 minutes and then flip (the cooked side should be a golden brown). Salt and pepper to taste. Sprinkle on the parmesan cheese. Cook the second side on low for 15 minutes or until the fish becomes flaky. Serve with lemon or lime wedge.


FFC Walleye Recipes - Uncle Bob’s Honey Dip Walleye

Ingredients

8 walleye fillets

2/3 cup vegetable oil

1 egg beaten

1 tbl honey

¼ cup of flour

½ tsp sea salt

Pepper to taste

Cracker crumbs or bread crumbs

Wash and dry the fillets. Heat the oil in a skillet at least 10 inches. Beat the egg and mix in the honey. Combine cracker or bread crumbs with flour, salt and pepper to taste. Dip fillets in egg mixture and coat with cracker/bread mix. Fry until golden brown (about 3 minutes per side) or fillet easily flakes. Serve with lemon wedge. then coat with cracker mixture. Fry until golden brown about 3 minutes each side. Serves 6-8


FFC Walleye Recipes - Walleye in a Pocket

Ingredients

8 Walleye fillets

Tin foil

Butter

Bread crumbs

Parmesan cheese

Salt and pepper

Oregano

Fresh lemon or lime

Create 8 individual pockets for each walleye fillet, enough so the tin foil can be eventually folded around the fillet with a good seal. Place one fillet in each pocket. Spread butter on the fillet. Sprinkle with salt, pepper and oregano to taste. Cover the top with bread crumbs. Lightly sprinkle parmesan cheese. Cut the lemon into slices and place 2 slices on the fillet. Fold the tinfoil back over the fillet and tightly seal. Place on hot bar-b-que and cook for 12 – 14 minutes without flipping. Fish is done when it can be flaked with a fork.


FFC Walleye Recipes - Cheeky Walleye

Very simple. After you fillet the walleye, remove the cheeks. Poke your knife at the base of the cheek, and rotate the blade (bending it somewhat) around the cheek bone. Reack in and “pop” the cheek out. Some folks call them “poorman’s lobster”. They are not big, but a great appetizer as you wait for your supper to cook

Ingredients

16 walleye cheeks

Butter

Flour

Salt

Pepper

Mix the flour, salt and pepper. Coat the cheeks in the mixture. Fry in butter until golden brown. They are fantastic!


FFC Walleye Recipes - Crispy Walleye

Ingredients

Fresh walleye fillets

½ cup flour

2 eggs

¼ cup of mild ½ cup bread crumbs

Oil for shallow frying

Salt and pepper to taste

Lemon wedge

Heat ½ inch of oil over medium heat. Rinse and dry each fillet with a paper towel. Mix the flour, salt and pepper. In another bowl mix the eggs and milk. Roll the fish in the flour and salt. Dip the fillet in the egg mixture and then roll in the bread crumbs. Cook in oil for 4 to 5 minutes. Turn the fillets carefully and cook for another 4 minutes or until the fish easily flakes. Place on paper towels to drain and place in oven to keep warm. Serve with lemon.


FFC Walleye Recipes - Baked Walleye Fillets

Ingredients

Melted butter

2 green onions

Fresh mushrooms

Salt and pepper to taste

Marjoram

Parmesan Cheese

Bread crumbs

Wine

Fresh lemon

Preheat the oven to 400F. In a large buttered baking dish spread chopped green onions and mushrooms on the bottom. Place the fish on top. Season fish with salt, pepper and marjoram. Lightly sprinkle the dish with wine and lemon juice. Sprinkle the cheese and bread crumbs on top of the fish. Drizzle melted butter over the crumbs. Bake for 5 minutes and then loosely place tinfoil over the dish, careful not to seal. Bake until fish is done (7 to 10 minutes) or until flaky. Serve with squeeze of lemon.
