Hi and thanks for checking out this tasty baked trout recipe. This recipe will work well with both rainbow and lake trout.

When making this dish, you want to make sure you are using mustard that has a nice smooth texture instead of some of the grainy mustards that are available. This is a phenomenal dish to whip up on a warm spring or summer day because it is light and will not feel like it is weighing you down the way other baked fish recipes can.

Ingredients:

  • • 2 tablespoons mayonnaise (use light mayo for an even lower calorie dish)
  • • 2 teaspoons smooth, good quality Dijon mustard
  • • ¼ teaspoons salt
  • • ¼ teaspoons freshly ground black pepper
  • • 1 tablespoon fresh parsley, chopped finely (use regular parsley and not the flat leafed variety)
  • • 1 lemon cut into four wedges
  • • 4 fillets of rainbow trout, each weighing about 6 ounces
Prepare dressing by combining the mayonnaise, Dijon mustard, salt and pepper.

Prepare fillets by rinsing them and then patting them gently using paper towels. Place fillets on a rimmed baking sheet that has been greased lightly so that the fish do not stick.

Once fillets are dry and placed in the baking sheet, brush each fillet with the Dijon and mayonnaise mixture.

Fish should be placed into a broiler at a distance of about six inches below the heating element. It should be cooked until each fillet flakes easily with a fork, which should take approximately six minutes.

Remove the fish from the oven and serve by garnishing with parsley. Fish should be accompanied by lemon wedges which can be squeezed over each fillet immediately before eating.
