Stewed Fish Recipe

A hearty meal for a cool day

A stewed fish recipe is simple to make and a nice change from the ordinary. Rather than beef, stewed fish recipes give you a healthy and delicious alternative. Served with fresh buns, it makes for a great meal on a cool day.

Below is a mouth-watering sample taken from the forthcoming cook book titled Canada’s Best Fish Recipes. Many of Canada's delicious recipes will be in one easy location for the entire world to enjoy.


Grandpa’s Fish Stew

Ingredients

1 Cup chopped onion
2/3 Cup chopped fresh parsley
2 Large cloves of minced garlic
6 Tbsp olive oil
1 Can crushed tomatoes
1 Cup freshly chopped tomatoes
1/2 Cup of clam juice (white wine and fish stock can be substituted)
2/3 Cup white wine (dry)
3/4 Pounds of walleye fillets
3/4 Pounds of pike fillets
Oregano
Tobasco
Thyme
Pepper

Cut the fillets into 1 or 2 inch chunks.

In a large pot heat the oil over medium to high heat. Add the garlic and chopped onion and sauté for 4 minutes. Add the parsley and stir for 1 minute. Include the tomatoes and cook for another 2 minutes.

Add the white wine, clam juice, pike and walleye and simmer for 7 to 10 mintues (or until the fish easily flakes with a fork). Add seasoning items to taste.

Serves 4.


Spicy Red Pike Stew

Ingredients

2 Pounds northern pike fillets (walleye is a good substitute)
1 Tsp grated lemon peel
1/2 Cup chopped fresh cilantro
3 Large yellow or red bell peppers
5 Tbsp olive oil
12 chopped green onions
2 14oz Cans of crushed tomatoes
2 Minced cloves of garlic
1/2 Tsp dried crushed red pepper
3/4 Cup peeled and cooked shrimp (optional)

Broil the bell peppers until lightly blackened on all sides. Peel and chop the peppers, removing the seeds.

In a large skillet, heat the oil at a medium heat. Saute the onions until soft. Add the peppers, crushed tomatoes, crushed red pepper and garlic. Simmer for 10 minutes.

Add the cilantro and lemon peel, stir. Add the pike (and optional shrimp) and simmer until you can flake the meat with a fork. Season with salt and pepper to taste.

Add to bowls.

Serves 4 to 6.
