Smoked Trout Recipe
This is a terrific smoked trout recipe. My brother has made this dish his specialty and my kids ask for it when we go over. This is great as an appetizer served as is, or with cheese and crackers. You can also lay it on a tossed salad for a nice light meal.
This smoked trout recipe is quite versatile. If you’d rather use salmon you won’t be disappointed.
Preparing the Trout
- • Use five to ten pounds of rainbow or lake trout
- • Remove the pin bones
- • Slice the meat into chunks no larger than 5 inches by 5 inches
The Brine
- • 1/2 tsp garlic powder
- • 1/2 tsp onion powder
- • 1/3 cup red wine
- • 1 tsp cracked pepper
- • 1 quart water
- • 1/2 cup brown sugar
- • 1/3 cup salt
Stir together all brine ingredients and mix well.
Brine Directions
- Place fish pieces in a large container with the brine and make sure all of the pieces are totally submerged
- Refrigerate for 18 to 24 hours turning the fish once
- Remove the fish from the brine and rinse with water.
- Dry with a paper towel and set on a rack for an hour to form a pellicle
After the pieces have cured for approximately an hour, add your favorite seasonings to the trout. Make sure you season both sides of the fish. Some of my favorite include;
- • garlic
- • pepper
- • cracked pepper blend
- • brown sugar
- • mustard paste
- • lemon pepper
- • Cajun spices
Smoking the Trout
- Follow all directions for your particular brand of smoker.
- Preheat to 140 F.
- Try apple or hickory wood chips that have been soaked in water for several hours.
- Place quart of water in the smoker's water pan.
- Coat racks of smoker with non-stick vegetable oil spray.
- Place fish on racks and place lid on smoker.
- Check on the trout every 25 minutes.
The cooking time for this smoked trout recipe can vary by size and with of the meat. Small pieces can be cooked in as little as 3 hours, where as a large thick piece can take up to 10. As a general rule of thumb, fish is cooked when it can be flaked with a fork.
