Here is a great smoked salmon recipe. It is perfect for dinner or cocktail parties because the quiches are small enough to be an individual serving size. They are also convenient because they can be mixed up and cooked one day in advance of your event and then reheated when you are ready to serve them. After cooked, they can either be served hot or cold. You can also substitute smoked mackerel or trout instead of the smoked salmon for a nice change. Ingredients:
Prepare quiche filling by combining milk, beaten egg and chopped dill, then season using salt and freshly ground pepper. Lightly grease a 12 count muffin pan. Roll out pastry to 1/8” thick on a floured surface to prevent sticking. Using a floured pastry cutter which is slightly larger than the openings in the muffin pan cut circles out of the short crust pastry. Place pastry circles into the muffin pans and make sure that they are centered in the holes. Divide the diced salmon evenly among the 12 individual circles of pastry. Pour quiche mixture over salmon and top with some of the grated cheese. Bake in preheated oven for 20-25 minutes until egg mixture is cooked and set. To reheat, you can place quiches into a hot oven for approximately five minutes until they are warmed through.
