Sauce for Fish

Another terrific sauce for fish is the mango sauce below. Use it as a barbecue sauce. It tastes great on nearly any kind of fish, but I am partial to it on salmon and trout. A good fish sauce can really make or break a meal and this one is a keeper.

INGREDIENTS

  • • 1 ripe mango, peeled and cubed
  • • 1 cup onion, chopped fine
  • • 1 tablespoon garlic, minced
  • • 1 (28 oz) can crushed tomatoes, with juice
  • • 1 tablespoon molasses
  • • 2 tablespoons cider vinegar
  • • 1 teaspoon Tabasco sauce
  • • 1 cup prepared mango chutney
INSTRUCTIONS

In a large saucepan, over low heat, combine all ingredients. Simmer, covered, for 20 minutes or until the sauce thickens. Let cool and pour into a food processor and puree until smooth.
