Salmon Rub Recipe

I love fresh salmon. This salmon rub recipe is a great mix of fragrant herbs and spices that will make it a winner with your guests and family.

INGREDIENTS

  • • 1 tbsp coriander
  • • 1 tbsp salt
  • • 1 tbsp cumin
  • • 1/2 tsp black pepper
  • • 1 tbsp dill
  • • 2 tbsp sugar
  • • 1 tbsp yellow mustard seed
  • • 4 lb salmon
  • • 2 tbsp fennel seeds
  • • 1 tsp olive oil
INSTRUCTIONS

Combine all seeds in a skillet over medium heat; toast, shaking pan, until aromatic, 4 to 6 minutes. Grind the seeds and transfer to a bowl adding salt, pepper and sugar. Place salmon skin side down and rub the spice marinade into the flesh.

Brush grill rack with olive oil and place the salmon on the grill and heat to hot; coals should be glowing red and rack. Brush both sides of salmon and hot rack with oil.

Grill salmon flesh side down until firm and slightly charred for six minutes. Carefully turn salmon using 2 large spatulas and cook for five minutes or until fish can be easily flaked with a fork.
