In this dish, the balsamic honey glaze adds rich flavors to the already amazing taste of baked salmon. Baking it in the oven makes it something you can serve year round because it does not rely on a grill or plank to give it flavor.

Baked Salmon with Balsamic Honey Glaze

Ingredients

3 salmon fillets (approx 16 oz. each)
1 Tbsp freshly chopped oregano

For the Glaze you need:

• 4 tsp Dijon mustard (avoid grainy mustard; the texture does not go well with this dish)
• 4 cloves of pressed or minced garlic
• 1 Tbsp white wine (good quality drinking wine)
• 1 Tbsp honey
• 1/3 c. good quality balsamic vinegar
• Salt and freshly ground black pepper, to taste

Method of Preparation

  1. Oven should be preheated to 400 degrees Fahrenheit (200 degrees Celsius). Use aluminum foil to line a baking sheet. Spray the foil with non-stick cooking spray to prevent the salmon from sticking after it is cooked.
  2. When preparing your glaze, spray the inside of small saucepan with the same non-stick cooking spray. Cook garlic until it is soft over medium heat for approximately 3 minutes. Add mustard, white wine, honey and balsamic vinegar. Taste and adjust seasoning using salt and freshly ground black pepper. Without covering saucepan, simmer glaze for about three minutes until it has thickened slightly.
  3. Place salmon fillets skin down on lined sheet so that they do not touch. Using a baking brush, coat the top of the fillets with a thin layer of the balsamic glaze and then garnish with freshly chopped oregano.
  4. Bake in preheated oven until flesh will flake off easily with a fork (about 10 to 14 minutes). Use remaining glaze and brush tops of fillets again then season to taste with more salt and pepper. Transfer fillets to serving platter using spatula while leaving skin on foil.
