If you hate having to throw out leftover salmon, this salmon patty recipe is just what you need. It is a quick and easy way to create a tasty meal out of baked salmon and also offers you the chance to switch it up using baked trout as well. Kids love this recipe. Ingredients:
When potatoes are smooth and lump free, slowly mix in flakes of fish. Add salt and pepper and then incorporate the parsley and green onion as well. Add the egg and mix it to bind the patty mix together and to keep it from crumbling when you handle it. Shape patties, being careful not to let mix crumble or break. Place the formed patties on an ungreased tray or a plain, ungreased cookie sheet and chill for thirty minutes in the fridge or freezer. This helps to keep the shape of the patty when you are breading and cooking it. Prepare the coating mixture by combining beaten egg and water. To coat the patties, hold patties in floured hands. Dip the cake into the coating in the following order: begin with egg and water mixture and then place patty in breadcrumbs. Turn to coat. Make sure that the breadcrumbs are pressed firmly into the patty to prevent them from coming off during cooking. Chill patties for another thirty minutes. Patties should be fried in hot oil for four to five minutes. They should be crisp when they are ready to eat. At this point, the patties can be served with lemon wedges or can be refrigerated or frozen and reheated later. This salmon patty recipe will make 12 servings.
