This is one of our favorite salmon pasta recipes and it’s a great way to use smoked salmon. The addition of the scotch or bourbon gives the sauce a great flavor and the intensity of the alcohol really works well with the rich taste of the salmon. It is a rich and creamy sauce that works well on any flat pasta. To make it a little lighter, you can use reduced fat sour cream and skimmed milk, but it is meant to be thick and satisfying. Ingredients:
Prepare sauce by melting butter. Stir in the flour, making sure that it thickens but does not brown. Add melted butter and milk a little at a time. Stir after each addition to ensure that clumps do not form in the sauce. Season the sauce using salt and pepper. Taste sauce as you add seasonings so it is not overly strongly seasoned. Cook until sauce has thickened. Add sour cream and scotch or bourbon. Stir in smoked salmon, olive slices and parsley. Treat sauce gently so that salmon does not get broken up too much during the stirring. Once pasta is cooked and drained, place pasta in large serving bowl. Add sauce and toss to coat pasta. Sprinkle pasta with freshly grated parmesan cheese and paprika then serve immediately.
