People love delicious recipes of baked salmon when it is presented in an exotic way. Wrapping salmon in parchment paper is a great way to present dinner to your guests. The packages keep in all of the moisture, which causes the fish to be incredibly tender. You can use parchment paper, which is the more traditional choice, or you can substitute aluminum foil as well. Because the cooking liquids are kept in with the fish, the taste can be more intense than other cooking methods. Use individual packets if you are serving guests individually or use one large package for a visually stunning presentation dish. Ingredients:
Place 2 Tbsp in skillet and melt. Cook carrot and leek over medium-low heat. Stir frequently to ensure that vegetables are becoming soft but are not browning. This should take 5 to 10 minutes. Prepare paper or foil in the following way: Brush inside of paper with melted butter. If you are not using parchment paper, brush a layer of greaseproof paper with melted butter. Place a piece of foil on top of the paper. When vegetables are soft but not browned, remove them from the skillet. Place one quarter of the vegetable mixture on half of the each of the pieces of parchment paper. Place one piece of salmon on top of the vegetables and then top with the remaining vegetable mixture. Once fish has been topped with the vegetables, use salt and pepper to season the fish and then lightly sprinkle with the lemon juice. Sprinkle with an equal amount of white wine as well. Seal packages. Fold other half of parchment or foil over. Seal package by folding the edges over. Each fold should measure approximately two inches. This should create a semi-circle with the fish and vegetables sealed inside. Keep in mind that foil will be easier to fold and crimp shut but parchment paper is the more traditional choice to use when making this dish. Place packages on a baking sheet and cook in oven for approximately 10 minutes. Individual packages can be opened or they can be served to your guests for them to open. Keep in mind that when you open the packages, there will be steam inside so you may want to warn your guests before you serve them.
