A great recipe for salmon patties is the one provided below. This salmon patty recipe hits the spot as a main course and as an appetizer. This recipe goes great with a mayo topping or a spicy hot sauce (I love Frank’s Hot Sauce personally).

Not only is this an easy salmon patty recipe, it is tasty. Our kids ask for this. It’s a great way to get rid of leftover salmon. Give it a try.

Ingredients

  • ¼ Cup Vegetable Oil
  • 1 Fresh Egg (Whipped)
  • 1 Cup Yellow Cornmeal
  • 1 Can (14.5 ounce) Salmon (or leftover salmon)
  • ½ Cup Saltine Crackers (Crumbled)
  • 1 Cup Lemon Zest
Method of Preparation

Place the all-purpose flour on a wide and deep plate. In a medium sized mixing bowl, combine the salmon and the egg until it has evenly coated the fish. Once the salmon is coated with the egg, mix in the crumbled saltines until the mixture starts to get firm and you are able to form small salmon patties. Try to shape the balls into a size of 3 inches in diameter.

Roll the salmon patty balls into the flour and then pop into a large skillet over medium-high heat. Please remember to carefully drop the balls into the hot oil. Once the salmon balls are in the skillet flatten them with a metal spatula or a fork. Brown them on each side until golden brown and then remove. Set on a plate with layers of paper towels to drain.

Top with a mayo sauce or a spicy hot-sauce.
