Not only is the rainbow trout a terrific game fish, but it makes one heck of a meal. The trout has beautiful meat similar to that of a salmon. This makes it a delicacy and a favorite of fisherman all across Canada.


We have been collecting rainbow trout recipes from Canadian anglers for the past number of months. We are putting these trout recipes in a book called The Canadian Angler Cookbook and it is almost ready to pass your way. Here’s a sample of Rainbow Trout Recipes you will find in the cookbook.

Colby’s Rainbow Trout

Ingredients:

2 Fillets with skin on

˝ Tsp sea salt

2 Chopped green onions

1 ˝ Tbsp chopped bacon

1 Tbsp chopped tomato

2 Tbsp grated Colby cheese

Squeezed fresh lemon

Cover a baking dish with parchment paper and place the fish skin side down. Preheat the oven to 375F.

Sprinkle the salt, onion, bacon, tomato and lemon over the fillets. Cook for 10 minutes.

Remove the baking dish from the oven and sprinkle the cheese over the fillets and bake for 5 more minutes, or until the cheese is fully melted.

Serve with lemon wedges.

Tomato Baked Rainbow Trout

Ingredients :

1 Large rainbow trout fillet

2 Large tomatoes, chopped

4 Scallions, chopped

1 Cup shredded Swiss cheese

1 1/2 Tbsp sea salt

1/2 Tbsp black pepper freshly ground

1/4 Cup melted butter

4 Fresh limes

1 Tbsp balsamic vinegar

3 Tbsp grated onion

1 Tsp chopped dill

Place the fillets in a greased baking dish. Sprinkle in onion, salt and pepper. Place the chopped tomatoes over the fillets.

Broil for 10-12 minutes. While the rainbow is cooking, juice the limes. Put the scallions into the lime juice and add the balsamic vinegar and dill.

When the rainbow trout easily flakes with a fork it is ready. Take it from the oven and sprinkle with Swiss cheese. Pour the lime juice mixture over the fillets and serve.

Delicious.
