FFC Northern Pike Recipes – Old Fashioned Pike

Ingredients

4 northern pike fillets

3 cups milk

2 tbsp salt

3 eggs

Oil for deep frying

2 cups cracker meal

1 cup flour

Salt and pepper to taste

Fresh lemon

Soak the pike fillets in a mixture of 2 cups milk and salt for at least 2 hours. Pat dry. Heat the oil in a deep pan or skillet. Oil is ready when drops of water disappear instantly without smoking. Blend the eggs and remaining cup of milk. Mix the cracker meal, four, salt and pepper on a large plate or bowl. Dip the pike in the egg mixture. Roll the fillet in the cracker meal mix. Carefully lay the fish in the hot oil. Do not turn the fish. When golden brown, remove and place on paper towel. Serve with fresh lemon and tarter sauce!

FFC Northern Pike Recipes - Grand Marnier Pike

Ingredients

Northern pike fillets with no bones

Flour

Salt and pepper to taste

Cayenne

Butter

Grand Marnier

This is a very simple recipe. Mix the flour, cayenne, salt and pepper to taste in a large bowl or plate. Roll the pike in the flour mixture. Heat the butter in a skillet or frying pan, bringing the butter to a sizzle. Put a shot of Grand Marnier in the pan. It may flare up (which is perfect). Immediately place the fish in the frying pan with the butter and Grand Marnier. Cook about 5 to7 minutes on each side (or until golden brown). Fish is done when it flakes with a fork. This is a great and easy recipe – and is best when there is a shot of Grand Marnier for the pan, and a shot for the cook!. It gives the fish an orange undertone that is delicious!
