Grilled Salmon Recipes

This is one of our favorite grilled salmon recipes for the reason that it uses an entire grilled salmon instead of portions. Because people are not used to seeing an entire salmon, the dish often seems special. Parsley and lemon are deliciously added ingredients that compliment the rich taste of the salmon. They are right at home in this grilled salmon recipe.



Whole Grilled Salmon with Lemon and Parsley

Ingredients

  • • 1 8lb salmon, cleaned
  • • Salt (you can use kosher or sea salt if you prefer)
  • • 3-4 Tbsp extra virgin or virgin olive oil
  • • 1/4c fresh parsley, minced finely
  • • 4 oz (1/2 cup) non-salted butter, clarified
  • • 3 Tbsp freshly squeezed lemon juice (approx. 1 large lemon)
  • • Lemon wedges (for garnish)
Method of Preparation
  1. Clarify butter by melting in small saucepan over low heat. When butter has melted, it will produce foam. Skim off foam and pour clear butter into a small container. Discard milky substance.
  2. Prepare fish by washing and patting dry with paper towels. Split salmon down the middle so that there is a flesh side and a skin side. Mix olive oil and salt together and rub the flesh and skin of the salmon with this mixture.
  3. Prepare grill to achieve moderate coals and grease grill so that fish will not stick. Place fish, flesh side down, on grill. Close lid. You want to cook the fish over moderate coals for 5 to 10 minutes. Do not brown fish overly much.
  4. While fish is grilling, mix clarified butter, parsley and lemon juice together. Remember to use unsalted butter so that you can control the level of salt in the sauce. This can make it easier to season to taste.
  5. After fish has grilled for 5-10 minutes, turn it over carefully and place it skin side down on the grill. Using long handled brush that can withstand the heat of the grill, brush butter mixture onto the salmon’s flesh. Close lid.
  6. Cook a further 25 minutes or until the flesh can be cut into flakes with a fork. Flesh should be more pink than orange and should be more opaque when cooked. While fish is still warm, skin and debone it before serving.
When serving, provide lemon wedges with the salmon. This is a grilled salmon recipe which serves 4 to 6 people.
