Grilled Northern Pike Fillets
Ingredients
3 Pounds northern pike fillets
Creole seasoning
1/3 Cup Italian dressing
Worcestershire sauce
2 Tbsp Dijon mustard
1 Lime
In a bowl mix the dressing, mustard, a dash of Worcestershire sauce and freshly squeezed lime juice. Sprinkle Creole seasoning on the fillets. Place in a dish and pour the dressing mix over the fish and set in the refrigerator for no more than one hour.
Spray some non-stick spray on a charcoal grill. Grill the fish over medium heat or until it starts to flake. Be careful not to overcook.
Grilled Lake Trout
Ingredients
4 Lake trout steaks, 1 inch thick
1/4 Cup cooking sherry or wine
1/4 Cop soy sauce
1 Tbsp fresh lemon juice
1/2 Tsp lemon zest
1 Minced clove of garlic
Place the fish in a shallow dish. Mix the marinade together by putting together the sherry, soy sauce, lemon juice, lemon zest and garlic. Pour the marinade over the fish. Cover and put in the refrigerator for 60 minutes. Turn the fish often.
Place the trout on a well greased grill and cook over medium coals. Carefully turn once at about 4 minutes. Baste frequently. When the fish flakes easily with a fork it is done.
