Fresh Salmon Recipe

I love fresh salmon. There is nothing better than a fresh salmon recipe that brings the amazing flavor of the fish to life. The salmon recipe below has been in our family for many years and is a definite favorite. If you are a salmon fan, give this one a try!



INGREDIENTS

  • • 2 large peeled and sliced oranges
  • • 3 tbsp chopped fresh dill
  • • 1 large onion thinly sliced
  • • 1/2 cup orange juice
  • • 1/4 cup thinly sliced green onions
  • • 1 1/2 tbsp olive oil
  • • 1 1/2 tbsp fresh lemon juice
  • • 1 /2 pounds skinless salmon fillets
INSTRUCTIONS

Preheat oven to 400F. Place slices of one orange in a single layer in a glass baking dish. Top with onion slices. Drizzle with oil. Sprinkle with salt and pepper. Roast until onion is brown and tender, about 25 minutes. Remove from oven.

Increase oven temperature to 450F. Push orange and onion slices to side of baking dish. Arrange salmon in center of dish. Sprinkle with salt, pepper and 1 1/2 tablespoons dill. Spoon orange and onion slices atop salmon. Roast until salmon is opaque in center (7 or 8 minutes).

Mix orange juice, green onions, lemon juice and remaining dill in small bowl. Transfer salmon to platter. Spoon onion alongside; discard roasted orange slices. Pour orange sauce over fish and garnish with additional orange slices.
