Fresh Walleye Taco’s
Ingredients
1 Pound fresh walleye fillets
1 Tbsp chili powder
1 Fresh jalapeno
¼ cup fresh cilantro leaves
Butter
2 Limes
Flour tortillas
¼ Cup canola oil
Whisk together oil, chili powder, coarsely chopped jalepeno, chopped cilantro and freshly squeezed limes. Marinade the fish for 20 minutes in the mixture.
Warm a non-stick frying pan over medium heat. Place the fish in the pan and cook until brown on each side. Fish is done when it flakes easily with a fork.
Garnish with any of the following: Shredded lettuce or cabbage, hot sauce, sour cream, chopped red or green onion, fresh cilantro and salsa.
Hola Perch Taco
Ingredients
2 Fresh limes
¼ Cup orange juice
2 Tbsp taco seasoning
1 lb fresh perch fillets
1 Tbsp canola oil
2 Cups chopped lettuce
½ Cup chopped green onion
½ Cup sour cream
8 Tortilla’s
Lime wedges
Combine the taco seasoning, juice from the 2 fresh limes and orange juice in a bowl. Add fish to bowl and toss in marinade.
Warm a large non-stick skillet at a medium heat. Add the oil and cook the perch until brown on one side. Turn the fish and cook until golden brown or fish easily flakes with a fork.
Add the lettuce, onions and sour cream to a separate bowl and mix.
Warm the tortillas and apply about 1/3 cup lettuce mixture down the center of each tortilla. Evenly divide the fish among the tortillas. Fold in half and serve with lime wedges.
This one is a real treat.
