OK, onto some fish fillet recipes…

Honey Orange Walleye Fillet

The hint of orange rather than lemon makes this a sweet and tangy treat.

1 Pound Walleye fillets

1 Tsp oil

1 Tbsp honey

3 Tbsp frozen orange juice concentrate

1 Tbsp soy sauce

White pepper

Except for the walleye, combine the ingredients in a bowl. Marinade the walleye for 2 hours before cooking.

Remove the walleye and put the marinade to the side. Broil or grill the fillets 4” from the heat source, turning once. Brush with the marinade often. When the fish easily flakes with a fork it is done (10 to 15 minutes).

Oven Fried Pike Fillets

1 Pound northern pike fillets

1 1/2 Cups of bread crumbs

1/2 Tsp onion salt

1/4 Tsp white pepper

1 Lime

1 Tbsp water

1 egg

1/4 Cup butter

1/4 Cup flour

Preheat oven to 350 degrees.

In a glass baking dish pour in melted butter. Put to the side. In a bowl combine the water, squeezed lime juice and egg. Beat to stir.

On a shallow plate combine the flour, pepper and onion salt. Mix the ingredients with a fork.

Take the pike fillets and dip into the flour mixture. Take the fillet and then dip it into the egg mixture. Lastly roll the fillet in the bread crumbs for a nice coating.

Place the fillets in the baking dish with the butter. Bake for 15 to 20 minutes or until the meat flakes easily with a fork.
