FFC Fish Batter Recipes - Grandpa’s Beer Batter
The beauty of beer batter is the old adage – “beer for the batter, beer for the chef”. This is among the tastiest and easiest of the fish batter recipes to make. It works well with virtually any kind of fish.
Ingredients
A can of beer (12 ounce) – Use your favorite but light beer seems to work very well.
1.5 cups of four
Pinch of salt
Teaspoon of Paprika
½ teaspoon of pepper
Pour the beer into a large bowl. Mix the other ingredients until the batter turns light by whisking until the batter is light with a light foam. (The batter should be used right away, but can be stored up to four days in the refrigerator).
Get another cup of flour to roll the fish in prior to putting on the batter. Heat at least 2 inches of oil in a frying kettle or electric fryer. If you can get it to 375 degrees – that is perfect.
Now roll the cut up fillets in the flour, shaking off any excess and dip it into the batter. Make sure to coat it well. Drop the meat into the hot oil. When they are brown on one side turn and brown them on the other side. Drain on paper towels.
This batter is also excellent for deep frying fish. If you have an outdoor cooker to heat the oil – it's another good way to do it. Place the fish one at a time into the fryer after heating the oil. When the fish is golden brown, remove (with a steel spoon or tong’s) and drain on a paper towel.
This is a tasty recipe and comes highly recommended.
