Healthy Fish Batter

Ingredients

Sea salt

Pepper

Garlic powder

1 egg

Water

Spelt flour(bulk food store)

Plastic bag

In a shallow bowl put 1 egg, water (Approx 1 tbs.) and mix well. In plastic bag mix sea salt, pepper, garlic , and enough spelt flour to coat fish fillets. Dip fish in liquid first and then shake well in dry coating. Make sure coating sticks to all areas of fillet. Pan fry or deep fry. The spelt flour gives a totally different taste and crispness. Once hooked you will never use white flour again.


Beer Batter Walleye

This recipe also works well with perch and northern pike.

Ingredients

2 pounds walleye fillets

3 eggs

1/2 can light beer

2 tsp salt

1/2 cup flour

1/2 cup cornmeal

Pepper to taste

Beat the 3 eggs and add beer. Sprinkle in 1/2 tsp of salt and stir. Combine flour, cornmeal, remaining salt and pepper in a separate bowl. Dip the walleye in the egg mixture and then into the flour mixture, and then back into egg mixture. Fry in butter or vegetable oil until golden brown turning once. When fish flakes easily with a fork, it is done. Very good.


Crispy Perch Fillets

Ingredients

3 pounds of Perch fillets

Pinch of salt

Pepper to taste

1/4 tsp. garlic powder

1/2 large bottle of Kraft Thousand Island dressing

1 1/2 cup crushed corn flakes

Rinse fillets and dry. Season with garlic powder, salt and pepper. Roll the fillets in the dressing and then coat with the corn flakes. Arrange the perch fillets on a baking sheet that is lined with tin foil. Bake at 350 F for 7 to 10 minutes (or until the fish is golden and crispy).

Kids love this one!
