Catfish Recipes

Of all the catfish recipes we have had over the years, this is the most unique. The sweetness of the caramel coating blends really well with the flavor of the catfish but does not compete with it. The caramel gets really brown and chewy which gives this dish a really great texture. It can make a really great meal with rice and oriental vegetables and is a fantastic use for an affordable and under-appreciated ingredient.



Ingredients:

  • • 2/3 cup fresh, cold water divided into two 1/3 cup portions
  • • 2 tbsp high quality fish sauce
  • • 2 shallots, chopped finely
  • • 4 cloves garlic, peeled and finely chopped
  • • 1 1/2tsp freshly ground black pepper
  • • 1/4tsp red pepper flakes (more if you prefer your catfish to be spicier)
  • • 1/3 cup granulated white sugar
  • • 2 lbs catfish fillets, cleaned and boned
  • • ½ tsp granulated white sugar
  • • 1 Tbsp freshly squeezed lime juice
  • • 1 thinly sliced green onion
  • • ½ cup cilantro, rinsed, dried and chopped
In a small bowl, combine 1/3 cup of water and the fish sauce. Stir to combine and set aside. In separate bowl, mix together the shallots, garlic, freshly ground black pepper and the red pepper flakes.

In a medium skillet over medium heat, mix together the final 1/3 cup of water with 1/3 cup of white sugar. Stir this mixture occasionally until it becomes golden brown in color. Add the fish sauce mixture by stirring gently and then heat until it reaches the boiling point.

Stir in the shallot, garlic and pepper mixture. Cook until the shallots have softened, stirring to prevent the mixture from becoming overly dark brown. Add the catfish fillets. Cover the skillet and cook for approximately five minutes on each side. Fish should be tender and flake easily with a fork.

Remove fish from skillet and place on a large plate. Cover fish to preserve heat and set aside.

Increase the heat under the skillet to high and add the final ½ tsp of sugar. Add lime juice. Check plate where fish has been resting and add any juice which has collected.

Bring sauce to a boil and cook until sauce has thickened and reduced. Pour the caramel sauce over catfish fillets.

To serve, garnish with cilantro and green onions.
